ECOZYME-P is the formulated product of Proteolytic Enzyme and other side activities. It should be added during mashing and fermentation and before filtration.

Ecozyme-ALDC is used to avoid formation of the unpleasant tasting alpha-diacetyl from alpha-acetolactate during fermentation. Enzyme can similarly be used in the fermentation of alcohol, where diacetyl is otherwise formed and requires a maturation step before distillation.

Product Application and Dosage Instructions:
  • Ecozyme-ALDC is added at the start of the fermentation. Dosage is 10g/T cold wort.
  • Ecozyme-ALDC should be added through the broth pipeline when first broth begins.
  • Ecozyme-ALDC is also added after beer -  filtration and before canning.
  • It is added from the beer - pipe when filtration starts, if diacetyl of fermenting liquid is near to control value, the dosage is 7g/Ton of beer - 10-15 PPM

In beer manufacturing, barley grain is malted (germinated under controlled conditions) and kilned. This malt is extracted to give wort. The wort is cooked and treated with hops, fermented with yeast, filtered and stabilized.


In mashing, the aim is to produce maximum quantities of Fermentable sugars in a liquor which is easy to filter. Key enzyme activities are Alpha Amylase, Beta Glucanase and Xylanase may also be of some importance


The importance of Beta-Glucan hydrolysis is required to enhance the rate of wort and beer filtration, and prevent formation of Beta-Glucan hazes in the final product.
